Lemme tell you guys a fun little thing about…

… Hypermobility Syndrome! It’s great! You can move your joints in REALLY unpredictable ways and sometimes they just sort of pop out of socket. Sounds like fun right?

Well it is very much not a fun thing. And as any sort of chronic pain sufferer knows, sometimes you’re left with about as much energy as Ron Weasley’s emotional range. AKA, not much. I don’t have it nearly as bad as many sufferers, but the joint weakness leads to muscle overcompensation which leads to muscle spasm, and basically

Anyway, when you’re low on spoons, as it were, you know you’ve got a limited amount of energy to accomplish anything you need to do for the day. And when you’re low on energy, you make breakfast and call it good.

Biscuits and gravy. A quintessential American breakfast food. It’s quick, it’s easy, and generally speaking can be done by sitting on the couch and checking on it every few minutes. Which is what I did.

I started with breakfast sausage, like any good american

So you take your breakfast sausage, and you dump it in your (yes, again) cast iron skillet. Then you scramble it all up until it’s in small, gravy-sized pieces.

So then you add about this much flour. enough to completely coat the cooked sausage crumbles, but not so much that there’s a bunch of loose flour sitting around in your pan.

Stir it all up in there. All the nooks and crannies.

After you get this accomplished, you’re going to add milk. I cannot give you any sort of measurement, because this really must be done by eyeballing it.

So now that you’ve poured in the milk, you’re literally gonna turn up the fire and wait for it to come to a boil. At this step you can add a little salt and pepper as well, really just to your preference.

Now, after this step, probably don’t go sit on the couch watching Hocus Pocus and FORGET about it. Because that is also what I did. And it turned out fine but it was boiling like, a lot. So probably set a timer and go check it every 5 minutes or so.

But see how nice it will look when it’s done?

Really though, it stuck to the bottom a bit but turned out otherwise fine.

now add biscuits

And done! Eat over biscuits, fried potatoes, or whatever starchy treat you so desire.
